I know, I know. It's been way too long since the last post of a recipe. I am sharing a recipe for a family Christmas favorite. At our house it's not Christmas until you smell the Trigona baking. If you are a Greek Festival fan, this is the recipe for the triangle cheese pies.
Trigona
Preheat oven to 350 degrees. Mix crumbled feta, eggs, and cottage cheese. Set aside. Melt butter.
16 oz. Feta Cheese crumbled
12 oz. small curd cottage cheese
8oz. Presidents butter melted
2 eggs
1 pkg. Athens Phyllo
Preheat oven to 350 degrees. Mix crumbled feta, eggs, and cottage cheese. Set aside. Melt butter.
Phyllo will dry out quickly so it is important to work quickly and have everything you need ready. Dampen one clean kitchen towel to cover phyllo. Remove one package of phyllo and slice widthwise into approximately 3”-4” strips with pizza cutter. Stack together and cover with towel. Remove 3 sheets of phyllo strips and recover remaining. Brush phyllo completely with melted butted. At one end of strip spoon approximately 2 Tbs. of feta mixture on strip and fold into triangle “football” of “flag” style. Brush triangle completely with more melted butter and place on Parchment or foil lined baking sheet. Continue this process until done.
Bake in 350 degree oven until golden brown approximately 20-30 minutes.
You can assemble and either freeze or refrigerate until ready to bake. Just brush with additional melted butter prior to baking.
